Pumpkin spice things up with this Halloween favourite that comes in at a smashing 122 calories per serving.

 

I love American food and always think we’re missing a beat in the UK by not incorporating more pumpkin into our diets; there’s so many fa-boo-lous options and pumpkin spice is absolute life! Around Halloween is the perfect time to pick up a purse-friendly pumpkin, simply roast and puree; you’ll be amazed at just how much tasty pumpkin flesh you get from a humble Jack-o’-lantern.

1 Lo-Dough base
3 eggs (approx. 150g)
425g of pumpkin puree (or 1 tin)
10g Stevia
3 sprays of 1-cal cooking spray
Splash of vanilla essence
Plenty of pumpkin pie spice to taste (I like a LOT 20g at least)[/vc_column_text][/vc_column][vc_column width=”1/3″][vc_column_text]Method:

  • Preheat the oven to 180°C
  • Spray a 7” cake tin with 1-cal cooking spray and press the Lo-Dough into the base
  • Place in the oven for a couple of minutes to harden
  • Combine all the other ingredients and pour into the base
  • Bake for 25 minutes and cool
  • Enjoy!
